In this practical course the student will, as part of a team of the service brigade, perform the role of host and server in a working dining room setting. Students will develop food & beverage service techniques, teamwork and organization skills, and customer service skills. Further, students will positively impact guests' dining experience through their product knowledge and up-selling skills. Finally, students will master the timely flow and routine of a meal period while interacting with the back-of- the house culinary team.
