In this course, students explore the role of nutrition in the promotion of general and oral health. The relationship between nutritional status and health through the lifespan is studied, including the major biological functions of the six classes nutrients. Canada's Food Guide to Healthy Eating and the Dietary Reference Intakes are used as the basis for qualitative and quantitative analysis of diets. Signs and symptoms of nutritional deficiencies are reviewed. The role of each nutrient in the development and maintenance of overall health and the health of the oral cavity is discussed. An introduction to nutritional counseling prepares students to provide dietary counseling for oral health.
