This course will explore the various concepts and ownerships of food and beverage establishments with an examination of the characteristics of independents, chains, and franchises. Restaurant types studied will range from coffee shops and fast food to fine dining and specialty food operations. These food and beverage operations will be studied within the context of the supplier /operator relationship, forecasting, budgeting, marketing, and controlling.
