With restaurants and other food and beverage establishments competing fiercely for the hospitality dollar, successful chefs and culinary managers are recognizing the importance of developing an interesting and memorable menu that is a key part of their operation's unique selling proposition. This advanced course will cover the areas of menu creation, design, and management. Computer exercises will be introduced to give students the tools and opportunity to create their own applications to calculate menu item costs, create attractive menus to market their operation's offerings, and create other sales tools to build their businesses.
