This course is designed to provide an overview of food and beverage operations, an essential element for success in any hospitality enterprise. The hospitality industry plays a vital role the economy of the twenty-first century and demographic trends indicate that it will continue to grow as the population ages and has more disposable income and time. Students will build on the accounting and financial management knowledge from previous courses to project revenues and expenses to effectively budget for a food and beverage operation. Content will include catering, other foodservice, and the legal and social responsibilities and liabilities associated with business in general and with alcohol service in particular.
