In this course, both basic nutrition theory and applications to oral health are presented. Students complete a dietary self assessment, using Canada's Food Guide to Healthy Eating as the standard. General nutrition topics discussed include the six classes of nutrients, Dietary Reference Intakes, and energy balance. Dental nutrition topics discussed include effect of diet on dental caries, preventive nutrition strategies for selected groups of clients, the role of nutrients in developing and maintaining oral structures. Students plan diet counseling sessions for clients with dental caries and dentinal hypersensitivity.
