This course builds on basic nutrition knowledge gained in DTL 122 to enable the student to identify clients in need of diet counseling and to develop a procedure for providing this service. Topics discussed include diet and dental caries alternative sweeteners principles of diet counseling preventive nutrition strategies for selected groups of clients and the interrelation among oral health nutrition and overall health. The role of nutrients in developing and maintaining oral structures is reviewed.
