Today's restaurant clientele consider nutrition a major factor in menu selection and overall satisfaction. In this course students explore the science of human nutrition and how it relates to the hospitality industry and individual lifestyles. Students use nutrition standards in analyzing their own diet. Six nutrients (carbohydrate, protein, fat, vitamins, minerals and water) as well as current topics including nutrition labeling, nutrition in the media and multicultural food habits are examined. Students will examine gluten-free, sugar-free, dairy-free, soy-free, wheat-free diets.
